Microsoft has made a lot of documentation available to the public via their <a href="http://www.microsoft.com/technet/prodtechnol/windowsserver2003/proddocs/server/iiswelcome.asp">TechNet</a> site.

Their IIS 6.0 Technical Reference is extremely helpful.
Inside of reference the most important section for new IIS administrators is the section on "Common Administrative Tasks".

Configuring Internet Sites and Services covers setting up web (WWW) and FTP sites on the server.
